Easy Recipe: Swanson and the Great Stuffing Debate

Everybody has a favorite way to prepare and serve their stuffing (or is it dressing?). I personally like chestnuts and onions in my stuffing and to have it baked in a pan rather than in the turkey. The past two years, we have prepared Thanksgiving dinner for our own little family. It was quite nice to be away from the hectic family gatherings. This year we will be attending the traditional get-together, so we cooked a little meal just for us this past weekend. In this article, I will share with you our easy recipe for Chestnut Stuffing and a few tips for a reduced-stress meal. First, I invite you to watch this video of some Thanksgiving fun . . .


Recipe: Easy Chestnut Stuffing
INGREDIENTS:
1-1/2 to 2 cups whole chestnuts, peeled
1 cup Swanson chicken broth
1 cup butter
3 large eggs
1 yellow onion, chopped
3 tsp minced garlic
1 tsp chicken or poultry seasoning
1 tsp salt
1/4 tsp pepper
2 loaves stuffing bread, cubed
Step 1. Preheat oven at 350 degrees.
Step 2. Place cubed bread in a large baking dish.
Step 3. In a medium saucepan, melt butter over low to medium heat, continuously stirring.
Step 4. Add onions, garlic, chestnuts, poultry seasoning, salt, and pepper to melted butter. Cook about 3 minutes or until onions are tender. Mix saucepan contents with the cubed bread in the baking pan.
Step 5. In a small bowl, combine broth with eggs. Drizzle mixture over cubed bread mixture. Toss to coat thoroughly.
Step 6. Bake stuffing mixture in the oven for approximately 40 minutes or until top begins to brown. (You can also bake this stuffing inside the turkey according the turkey's cooking instructions.)
This recipe yields approximately 16 side servings. If you are serving stuffing-lovers, then you have enough to serve about 10 people.
Tips for a reduced-stress holiday dinner . . .
  1. Order your turkey from a restaurant or supermarket, so that you just have to heat it and make the sides and dessert.
  2. If you are making a ham, buy a spiral cut boneless ham with glaze included. It is so much easier to serve.
  3. Instead of peeling the chestnuts yourself, buy prepared chestnuts, which are available packaged in pouches, jars, or cans. I prefer the pouches or jars because I can see what I am actually getting through the packaging.
  4. If you do not have time to bake, try offering a sundae bar instead, where guests can make their own sundaes. You can include holiday-themed toppings to make it more festive.
